Description
(2-hydroxy-1,2,3-propanetricarboxylic acid, 3-hydroxy-3- carboxypentanedioic acid) (C6H8O7) white-colour crystalline substance, well soluble in water, soluble in ethyl alcohol, slightly soluble in diethyl ether. Weak triatomic acid. Salts and esters of citric acid are called citrates. Being the main intermediate product in metabolic cycle of tricarboxylic acid, it plays an important role in biochemical reactions of numerous organisms. It is widely used as a flavouring agent, acidity regulator and preservative in the food industry (food additives E 330) for production of beverages, dry fizzy drinks. It is a safe ingredient!
